The restaurant at Edelweiss
In our restaurant we do things a little differently - breakfast is ordered the night before and we select one new dish every day, which is served to the hotel guests for dinner. Today's dish can be seen below.
We do not serve traditional Danish or Austrian food, but the food is inspired by flavors from all over the world. The food is shareable, green in its thinking and made with a focus on good ingredients, animal welfare and ecology.
Breakfast
At Edelweiss we don't run a traditional buffet. We hand out small order forms the day before and serve your wishes directly to the table the next morning.
This way we avoid food waste and give you what you really want. Breakfast is only for hotel guests - table reservations are not necessary.
Dinner
Every evening - except Wednesday (and Saturday in the summer season) - we serve one fixed dish, made with care and lots of flavor. We have
a small wine list, with carefully selected wines by Trine from Vinskabt. The wines come from houses and farmers with their hearts in the right place.
We appreciate a good piece of meat and this is often reflected in the selected dish of the day. If you are vegetarian, we will of course make a green alternative.
The restaurant is open for dinner from 18:00 to 19:30. As a guest at Edelweiss, you have priority access to the 50 seats up to three days before the evening in question.

We also have a strong focus on sustainability and reducing food waste, so our guests can enjoy meals that both taste good and are made with consideration for the environment.
